Lean Recipe of the Week: Turkey & Zucchini Skillet
Quick, one-pan, and protein-packed. Perfect for busy evenings.
🦃 Turkey & Zucchini Skillet
Servings: 4
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:
1 lb ground turkey (93% lean or leaner)
1 tbsp olive oil or avocado oil
2 medium zucchinis, diced or halved and sliced
1 small red bell pepper, chopped
1/2 red onion, chopped
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp smoked paprika
Salt & pepper to taste
Optional: 1 tbsp tomato paste or splash of coconut aminos for richness
Optional garnish: fresh parsley or nutritional yeast
Instructions:
Heat oil in a large skillet over medium heat. Add chopped onion and garlic. Sauté until fragrant (about 2 minutes).
Add ground turkey. Break it up with a spatula and cook until browned (about 5–7 minutes).
Season with Italian seasoning, paprika, salt, and pepper. Stir in tomato paste or coconut aminos if using.
Add zucchini and red bell pepper. Sauté everything together for 5–7 minutes until veggies are just tender but still bright.
Taste and adjust seasoning.
Serve warm, topped with fresh parsley or a sprinkle of nutritional yeast if desired.
