🍗 Recipe of the Week: Creamy Garlic Parmesan Chicken Thighs (Keto-Friendly)

Elevate your dinner game with this comforting, low-carb dish that’s bursting with flavor! Whether it’s for a cozy night in or meal prep for the week, this recipe is guaranteed to impress.

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

  1. Heat a large skillet over medium heat and add the olive oil.

  2. Season the chicken thighs with salt, pepper, and paprika. Sear them in the skillet, skin-side down, for 5-7 minutes until golden and crispy. Flip and cook for another 5 minutes. Remove and set aside.

  3. In the same skillet, sauté the minced garlic until fragrant (about 30 seconds).

  4. Reduce the heat and add the heavy cream, Parmesan cheese, and Italian seasoning. Stir until the sauce is smooth and creamy.

  5. Return the chicken thighs to the skillet, spooning the sauce over the top. Cover and let simmer for 15-20 minutes, or until the chicken is fully cooked.

  6. Garnish with fresh parsley and serve with cauliflower rice or zucchini noodles for a perfect low-carb pairing!
